Summer Quinoa Stir-Fry

There really isn't a quinoa recipe that I haven't liked, but this one I love. With a splash of lemon on top, this zesty stir-fry is perfect for summer! Give it a try and let me know what you think in the comments section down below.

 

Ingredients for Stir-Fry

1/2 tbsp coconut oil

3 scallions, finely sliced

1/2 red bell pepper, finely diced

1/2 zucchini, diced

1/2 lb boneless, skinless chicken breast, cut into 1/3 inch thick slices (or pull chicken from a pre-made rotisserie chicken)

2 tsp smoked paprika

1 cup cooked quinoa (I cook mine with vegetable broth rather than water for extra flavor)

1/4 cup feta cheese, crumbled

1 small bunch of parsley, leaves only, roughly chopped (optional)

Lemon juice

Salt & pepper 

 

Directions for Stir-Fry

Melt the coconut oil in a large frying pan or wok over medium heat. Add the scallions, bell pepper and zucchini, and cook until the vegetables begin to soften, 2-3 minutes.

Increase the heat to high and add the chicken and paprika. Salt and pepper to taste. Cook until the chicken is cooked through, 3 -4 minutes.

Stir in the cooked quinoa for about 1 minute. Transfer the stir-fry to a bowl and top with feta, parsley and a squeeze of lemon juice.
