Healthy Pancakes w/ Pomegranate
I first discovered this recipe when I signed up to do a 21 day vegan challenge. I had never heard of buckwheat before and also fairly new to vegan food... I didn't have very high expectations. Oh whoa was I wrong! The rich flavors of the pomegranate seeds/maple syrup combo is out of this world - your taste buds will do a party dance on your tongue...literally! The pancake mix is very runny so the pancakes turn out to be more crepe like, which I also love.

Ingredients for Healthy Pancake Mix
1/2 cup buckwheat pancake mix
10 tbsp plant-based milk (I recommend soy milk)
1/2 tbsp vegetable oil
1/2 tbsp egg replacer (or mix one egg in a small dish and use 1/2 tbsp of it)
1 1/2 tbsp water
Directions for Healthy Pancake Mix
In a bowl, combine the buckwheat pancake mix, plant-based milk, vegetable oil and egg with 1 1/2 tbsp water. Once thoroughly combined, pour a grapefruit-sized portion onto a hot pan and cook until both sides are golden brown. Top with pomegranate seeds, slivered almonds and maple syrup to taste.
